An oyster takes three years to mature to a consumable size, so each oyster bed is worked only once or twice a year. Most young Gullah Geechee aren’t interested in harvesting oysters for a living. The eight-month long harvesting season, during which the arduous work is carried out regardless of the weather, turns them off.
